"Puerros Pimientos"

A favourite easy cook 2 pan dish I make is Leeks & Red Peppers (& walnuts if you like nuts) I don't think it has a name but Puerros Pimientos Rojos makes it more exotic sounding ;-)
Slice the leeks into approx. 20mm thick rounds, the peppers into rings or chunky strips or however you like. Olive oil in pan, saute veg on a low heat until soft & lightly browned, turning to prevent burning. I usually have to add a bit more oil as the leeks soak it up, the trick is to add in small top ups as it can get a little oily otherwise. I usually add the walnuts near the end, just to warm or slightly toast them. Takes 15 or 20 mins, depending on how high the heat. Serve with pasta or rice of choice. We prefer brown rice, it has better texture & flavour.
You could also make Kasha (Buckwheat)- very popular in eastern Europe, or polenta (coarse cornmeal) We like polenta but the pan needs more washing up than the others. The good thing about polenta is if you make too much, let it set then slice & fry the next day. Instead of nuts I guess you could add prawns or something - but we don't have a freezer, only a cold box, so storage would be an issue for us.
