hi everyone. for the first time ever and as a direct result of the virus we will be on our own this year and have decided to go away for Christmas in our Eriba. Looking for suggestions for dinner (vegetarian) that can be cooked on the standard three gas burners and a small microwave. we could if necessary buy other equipment such as remoska. we usually have a homemade wellington type dish filled with chestnuts and mushrooms and other goodies. seen shop bought stuff which looks good but all require oven cooking for the pastry. so is it possible to cook a pastry based dish without a conventional oven?

we have heated shop bought quiche and home made ready cooked quiche in the Remoska. This week we heated a couple of shop bought pasties. Pastry all times has come out well. Our son and partner are vegetarians and last year we did a similar wellington style dish to yourselves. This was oven cooked and part of the remainder frozen and later re-heated in the Remoska.
If you are re-heating and it is not very thick then you should be fine. I would expect a generous serving for two would need a re-heat of about 40 mins. If you did sauted pots in the frying pan and then slid them in around the wellington for the last 15 minutes to keep warm and possibly crisp up a little then the hob should be free for the veg.

I spoilt myself to one to replace the one we use at home. I have an older one in the van. You can pick these up second hand for £50 ish if lucky, but they generally go for £70+ p&p, so new at £100 is worth considering.

We have a wonderful recipe for a goats cheese, aubergine, couscous with raisins and apricots and cranberry jelly sort of Wellington. It’s puff pastry but latticed on top. As it’s just the two of us it will probably be a fairly traditional nut roast with all the usual trimmings, the other recipe is a bit of a faff for two. Usually we have a houseful of vegetarians but alas not this year ☹️
With a Remoska plus 3 burners all things are now possible. Bubbly in the fridge, lights up around the inside of the Eriba, very small tree. As you may guess we have done Christmas in the Eriba ( on the drive). Whatever you do, enjoy 😁
