I sorry to read of your loss. I hope you find your van soon. We have a Triton 430 and you cold easily leave the bed up and have the dinette in the nose. It has the washroom too.

We used to visit my wife's godmother who lived in Cromer and stayed at a C&MC CL that is very nice https://www.churchfarmcottagesnorfolk.co.uk/caravan-site/ From there it's only a short drive to Dom's.
I don't know if you have used the Harwich to Hook of Holland crossing, which I'm guessing would be your preferred crossing to Denmark if going by car, but it's excellent value especially if booked early.
