I'm not sure why you'd want to swap the fridge as a compressor type will have to run off the battery in such circumstances with a possible risk that the power in the battery drops below the minimum that a compressor needs to operate. With the normal absorption fridge you can run it on two of the largest gas cylinders you can fit in the gas locker. The only use for gas otherwise is for the hobs, which use a tiny amount, so gas there should be plenty of gas available. If you think that you'll use that much gas that you'll need to buy more and they might not be available then opt for Safefill or similar, with a selection of filler nozzles to fit possible foreign filling points.
A solar panel is worth having as is a lithium rather than a lead acid battery but to my mind it's counter intuitive to put all your chilling eggs in one expensive basket.
For reference I've run two leisure vehicles with compressor fridges. They're easy to operate, switch on and forget, until they run out of juice. They can also be disturbingly noisy in a small enclosed space in warm temperatures at the dead of night, whereas absorption fridges are absolutely silent.
