Chief, I had a thought, when I owned my little pan fam I had intended on attending classic car shows alone with it. To save the hassle of making the bed I planned to use a proper high quality camping bed down the centre of the aisle. A bed which I've owned a while and used on a couple of car shows in my VW.
This bed is good for 6' 6" and is very comfy. Can't recall the make but I'm sure there are many to choose from so have a look on line.

Equipped with such a bed, you could easily buy and use a transverse sleeping arrangement pan and keep the dinette for dining / lounging. Really opens up options and folds down to fit in your shirt pocket.

Depends on if you are travelling alone or with company of course,

Yeah it's great and I'm super happy, I have told my newly retired parents that they are now on the car insurance and the van is there to enjoy their retirement!!!
