I’ve disconnected everything, but I’m having a lot of difficulty undoing the large nut underneath the tap. The problem I’m having is that the grips I have can’t get a good grip on the nut due to the underside of the cartridge protruding downwards. I’m a determined little so and so, but no matter what angle I try to grip from, I just can’t get anything on it. Is there a special tool for doing this?
I’m almost at the point of spitting my dummy out, I know I can do the job, I just don’t know how anyone is meant to operate in that small space...
It would take a contortionist, or the ability to dislocate my shoulder.
All help gratefully received!

You'll find it easier to get at the nut by popping the sink out - much better than trying to squeeze yourself in the kitchen cupboard to get at the thing.

And the best tool for the job is a pair of waterpump pliers - select a pair with wide enough jaws.

Sounds like good advice, is it difficult to remove the sink?
I’ve been using adjustable water pump grips, maybe I will be better placed to do it with the sink out. It will definitely give me more scope for better angles with the grips.
