Simple Remoska Frittata

I’m a great believer in keeping things simple but tasty, especially in the Eriba.
Here’s how I make my Remoska Frittata.
Ingredients.
A knob of butter
4 eggs
A splash of milk
Seasoning
Smoked bacon or lardons
Spring onions
Sliced Tomatoes
Grated mature cheese.
Method.
Put the eggs into a jug, add a splash of milk and seasoning, then whisk.
In a small pan gently fry the bacon or Lardons until just coloured
Put a knob of butter into the Remoska
Pour in the egg mix
Drop the bacon, spring onions into Remoska and stir gently to mix.
Top off with the sliced tomatoes and grated cheese, season as required.
Cooking times may vary but I usually check at about 15 to 20 mins, the Frittata should have risen and the topping browned, make sure the egg mix is cooked through.
Foot note.
The ingredients are just a guide, rule of thumb is, if it goes on a pizza it will go in a Frittata.

However it should be done all in Remoska saving the need to washup a small pan. Put the onion (garlic) and (unsmoked lardons) in the Remoska and cook for 15-20 mins then continue !

Just read this for the first time. I've done something similar for many years. I fry off any odd peppers, mushrooms, onions and pre boiled potatoes until they have a little colour/are softened. If you have any Chorizio chop this up when frying the veg off. These veg go into the Remoska with a handful of frozen peas if at home or sometimes tinned green beans if in the van. 5 or 6 beaten eggs and a handfull or two of grated cheese,with sliced toms on top. It really is a flexible recipe of use what you have.
I find this takes nearer 25/30 minutes. Left to cool and served with coleslaw and a slice or two of good ham this is one of our favourite meals. Add a good dollop of piccalilli and even better. And for extra enjoyment drink with a bottle or two of beer, and not that lager stuff.
