Wiring in a 12V/USB/Voltmeter off the supply cable to the Truma blower control unit....

... any reason why this is a bad idea and would a single 10Amp in-line fuse on the live cable to the switch suffice (my plan is wire in the 12V / USB / Voltmeter in series from the on/off switch)?

10 amp in line fuses on both wires are a good idea. I fixed a couple of tabs to my battery and ran these through in line fuses to a terminal strip. From these I fed power to fridge fans, underbed/locker light and tv feed. I could run another pair of leads of to a battery voltage display but have not [yet] bothered.

Only fit a 10A fuse if the wires you are installing are rated to at least 10Amps.
Fuses are installed to prevent fires from overloaded cables, and not to protect equipment.
I would fit a 3A fuse for your application, and close to the source, ie, the other end of the wire to the voltmeter/usb.
